The Healthy Giraffe Vegan Pancakes

There is an answer to making glorious pancakes minus animal products! My daughter, Morgan, was the first to turn me on to vegan pancakes and I’ve been on a quest to perfect my own since. Here I share the result of many experiments to come up with a fantastic and easy recipe combination.

First, let’s examine what’s wrong with traditional ingredients in pancakes. This is the set of ingredients I found in my first search for pancakes:

All-purpose flour, baking powder, salt, sugar, cow’s milk, egg, and butter

There isn’t anything great about all-purpose flour but it’s not the worst of what’s going on here. I use Gluten-Free often as Morgan needs that option so it makes it easy to have in the house. Almond and oat flour are other alternatives that could give this recipe a boost.

Baking powder gives the pancake its rise. Table salt and sugar are addictive and seem to be added to everything in the Standard American Diet (SAD). They are not healthy and depending on your overall health can be something to watch for or completely avoid.

The ingredients reach the next level of badness next starting with cow’s milk. The purpose of cow’s milk is to make a calf as fat as possible and quickly. That translates the same for humans. It will make you fat and the high levels of cancer producing properties in the protein make it a pretty terrible option. Eggs are loaded with cholesterol and 70% of calories are saturated fat…great heart attack producers. Butter…another form of a dairy killer…saturated fat and cancer. Love this study I found years ago – 75 percent drop in butter consumption in Finland helped create an 80 percent drop in heart disease mortality. The U.S. loses 650,000 people annually to heart disease…much more potent than COVID deaths but for some reason it doesn’t show up in media. $ometimes you gotta wonder why?

But there is an answer…the Healthy Giraffe Vegan Pancakes…free of animal products causing all that fat, heart attacks, Type-2 Diabetes, and Cancer….among all of the chronic illnesses, yet tastes glorious. Here we go:

  • 1 Cup – Flour of Choice
  • 1 Cup – Plant-Based Milk of Choice
  • 1 1/2 Tablespoons – Baking Powder
  • 1 Tablespoon – Apple Cider Vinegar
  • 1 Tablespoon – Agave
  • 1 Teaspoon – Vanilla Extract
  • Optional – Blueberries (shown in blog photo or try vegan chocolate chips, etc.)

Mix all the ingredients and then do your think on the stove top. This batch makes about 5-6 medium size pancakes. Let me know what you think if you try.
