Giraffe Nachos (Cheeze Sauce)

It took several attempts in the Giraffe laboratory to nail a healthy nacho sauce and it’s now ready to share. You can use to make nachos as seen in the blog photo and I commonly use for a dipping sauce when making french fries.

This will take under 20 minutes to make and most of that time is boiling the first two ingredients.

Ingredients

  • .75 pounds yellow/gold potatoes
  • .50 pounds carrots
  • 3 tbs nutritional yeast
  • 2 oz. unsweetened plant-based milk of choice
  • 2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder

Instructions

  • Bring medium pot of water to boil
  • Dice potatoes and carrots and boil for 12 minutes
  • Place all ingredients in high speed blender for one minute

That’s it! Again, I use as a dipping sauce most often but in the picture, those nachos included chips, chorizo, diced tomatoes, black beans, and red onion. Make the nachos to your preference and enjoy!

This recipe is completely healthy unless you are watching your salt intake. You can replace with a no-salt option or pull back the quantity to your preference. Let me know what you think.
