I’m asked often for ideas on healthy desserts. Here I’ll share three easy to make, healthy, and tasty sensations you can try at home that won’t make you feel guilty…unless you have 3-4 servings…
Banana Whip
This one is the easiest to make and I give credit to Lauren Nolan for sharing this gem. We also recorded a short video if you want to see us demo this creation. This will make 1 serving.
- First you have freeze two frozen bananas (ripe/over ripe)
- Add the following ingredients in a blender and blitz until smooth:
- 2 frozen bananas in a high speed blender
- 2-3 tablespoons of plant-based milk of choice
- A splash of vanilla extract (splash is Lauren’s term…kinda sounds cool…)
- Pour contents into a bowl
- Add toppings of choice (ex. peanut butter, dairy free chocolate chips, cookies, shredded coconut, walnuts, goji berries, blueberries, banana, strawberries….); pictured above with cookies
BERRY CHOCOLATE CHIA PUDDING
I found this very light filling dessert inspiration via Dr. Michael Greger and changed a couple things to suit my taste after a few attempts. This will make about 4-5 servings.
- Add the following ingredients in a blender and blitz until smooth:
- 1 ripe avocado (medium to large and remove the pit)
- 1.5 cups frozen blueberries
- 4 tablespoons cacao powder
- 3 tablespoons peanut butter
- 2/3 cup date or maple syrup
- 1.5 cups plant-based milk of choice
- Pour contents into a bowl, add 1/4 cup of chia seeds, and mix thoroughly
- Cover and place in:
- freezer for 20-30 minutes and then in the refrigerator for another 20 minutes (I’m impatient so I’ve gone this route successfully a few times)
or - refrigerator for 6-8 hours
- freezer for 20-30 minutes and then in the refrigerator for another 20 minutes (I’m impatient so I’ve gone this route successfully a few times)
- Add toppings similar to the Banana Whip above and enjoy (pictured above with banana)
CHOCO-NUT DRINK
This is great to make and bottle a few to grab and go. Chocolate…sweet and a bit of salt combination is bliss. I’ve made these for mid-morning or afternoon snacks as well and if you add a protein powder to the recipe it can really be a nice post workout filling drink. This will make approximately 3 – 12 oz bottles.
- First, boil a 1/2 cup of raw cashews for five minutes (while you prepare everything else)
- Add the following ingredients in a blender and blitz until smooth:
- 32 oz plant-based milk of choice
- 4 tablespoons cacao powder
- 3 tablespoons agave or maple syrup
- 1/4 teaspoon salt
- 1/2 cup of raw cashews you just boiled
- Pour into bottles or glasses of choice and refrigerate for 20 minutes
These desserts can be done quickly and as you can see with the toppings, you can make them extremely healthy or a bit more indulgent. That is for you to decide and I change it up all the time depending on what I have coming up that may inspire me to eat a bit more clean. Let me know what you make that is quick, tasty and healthy.
